One of the excellent foods of Tuscany is definitely Pecorino Toscano DOP cheese, produced in an area with an outstanding historical, cultural and landscape value. Driving along roads which wind between sweet hills and adorable medieval towns, you will arrive at the town of Pienza, where you can visit a cheese factory specialising in the production of this tasty product. Through a route with various steps and stages, from methods of raising the sheep through to the stages of ripening the cheese, the farm staff will be happy to give you all the information and instructions regarding the production, also guiding you to the tasting of the products, so that you can enjoy the different flavours, and learn about the various characteristics and quality. You will also have the chance to visit the beautiful historical centre of Pienza, a town with a high artistic value, and with beautiful urban scenery and wonderful views of the Tuscan countryside. The tour ends with a stroll through the streets and squares of the town, where you will find many distinctive cheese shops and delicious craft shops, for a pleasant day and a fun experience, immersed in the beauty of the Tuscan countryside.

Pecorino Toscano DOP: Since 1996 the product has been designated as having protected origins (DOP), issued by the European Community in that year. It is a soft or semi-hard cheese produced from sheep’s whole milk, coming exclusively from the area of origin. It is white or pale yellow in colour, with an intense flavour, fragrant and sweet. It is to be remembered that ricotta is also a by product, coming from the manufacture of cheese, often used in the preparation of  hand made pasta (Ravioli, Tortelli) or confectionery specialities.
